Food is an integral part of every life. When food is nutritious, delicious and culturally relevant, human health is optimized. In this program, you will receive foundational knowledge in anatomy, physiology and biochemistry to understand how the body utilizes food. Explore how to prepare food and develop recipes to be appealing and nutrient dense. Plan menus and prepare meals to meet the needs of individuals and groups. Learn about macro and micronutrients, nutritional biochemistry and how nutritional needs of humans change throughout the lifespan. Assess nutritional status and provide nutrition education and counseling to prevent chronic disease and optimize health.

A healthy body begins with healthy nutrition. It is important to understand how the foods we eat, and those that we don’t eat, affect our health.
In this program, you will study the nutritional needs of the body and apply that knowledge to advise others in healthy eating. Examine human anatomy and physiology and explore the role of vitamins, minerals, proteins, fats, carbohydrates and microscopic organisms in the body’s biochemical processes. Create nutrition plans, calculate caloric needs, plan healthy menus and advise clients about their diets.

Students graduating with a Bachelor of Science in Food and Nutrition will complete 120 required credits toward the degree in addition to U-Idaho core requirements.

Undergraduate applications open each September and admissions are processed on a rolling basis. Qualified students are admitted and considered for scholarships and financial aid as applications are received.
